Happy Pancake Tuesday Everyone!!...to be honest every other day can be a pancake mood day, but to join in with the Pancake Festives...making Yummilicious pancakes on this day tastes so much nicer. Here are 3 recipes to make some delicious pancakes as well as some yummy crepes:
BREAKFAST BANANA PANCAKES
Ingredients:
1 Cup - Self-Raising Flour
1 Cup - Semi-Skimmed Milk
1 - Free Range Egg
A Pinch of Salt
1 - Banana
A few knobs of Butter
To Serve:
Fat-Free Natural Yogurt
or
Any Fruit of your choice and a little drizzle of some maple syrup
Step 1:
Put the flour, milk, egg and salt in a mixing bowl and whisk until smooth. Once combined, chop the banana into smaller pieces and all then stir it through with a spoon. Pour the mix into a jug for easy pouring onto the frying pan.Step 2:Put a large pan on a medium heat and add a knob of butter. Once that melts, pour the batter about a spoonful at a time to the hot pan. You'll need to cook them in batches, cooking them for a few minutes until golden on the bottom, then flipping over and cooking for a few minutes more until they're done.
Step 3:When they are golden and fluffy, serve them right away with a dollop of natural yoghurt and some runny maple syrup drizzled all over the top. I much prefer just some fresh fruit in the morning on my breakfast pancakes.
AMERICAN STYLE PANCAKES
Ingredients:
225g - Plain Flour
1 - Tablespoon of Baking Powder
A Pinch of Salt
1 - Teaspoon of Sugar
2 - Large eggs (Beaten)
30g - Melted Butter (cooled down)
300ml - Milk
Knobs of Butter for frying
To Serve:
Savoury Style - Add some thin slices of bacon and drizzle some maple syrup.
Sweet Style - Fresh Strawberries along with Natural Yogurt or Fresh Cream.
Step 1:
The easiest way to make these is to put all the ingredients into a blender and blitz. But if you do mix up the batter by hand in a bowl, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug: it's much easier to pour the batter into the pan than to spoon it.
Step 2:
Heat the Frying pan. Pour the batter onto the pan to your preference pancake size. When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it's time to flip over onto the other side to cook.
Step 3:
Voila!...Ready for serving!
BASIC CREPES
Ingredients:
1 Cup - All Purpose Flour (Plain Flour)
2 Eggs
1/2 Cup of Milk
1/2 Cup of Water
1/4 Teaspoon of Salt
2 - Tablespoon of Butter (Melted)
To Serve:
Nutella Chocolate, Fresh Fruit of own choice, Fresh Cream or Ice-Cream.
Step 1:
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth. Transfer to a jug for easy pouring.
Step 2:
Melt a small knob of butter on the frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Step 3:
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Voila!!...Serve them yummy crepes hot.
